Gluten Free & Vegan Banana Bread

There are a few extra ingredients included in this recipe that make it extra special such as vanilla extract, desiccated coconut, pecans and cinnamon.


  • 5 bananas, mashed
  • ½ cup coconut oil, melted
  • ¼ cup coconut milk
  • 1/3 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup brown rice flour
  • 1 cup buckwheat flour
  • ¼ cup desiccated coconut
  • 1 teaspoon bicarb soda
  • ½ teaspoon ground cinnamon
  • ½ teaspoon clove powder
  • ½ cup pecans
  • ½ cup chocolate chips
  • 1 ripe banana for garnish (optional)


  • Preheat oven to 180*C
  • Place banana, coconut oil, coconut milk, maple syrup and vanilla in a bowl and mix until combined
  • Combine all dry ingredients
  • Add banana mixture to dry ingredients bowl and mix until combined
  • Add choc chips and pecans
  • Transfer the mix to a loaf tin lined with baking paper
  • Slice extra banana lengthways and gently place on top
  • Bake for 45-50 minutes or until a skewer inserted into the middle comes out clean
  • Allow to cool slightly in the tin, then turn out onto a wire rack and allow to cool completely before slicing
