Cracked wheat makes a change from consuming wheat in the form of bread or pasta. Wheat benefits the heart, spleen and kidneys and calms the spirit. These can be sensitive in summer, so wheat is a nutritious and important part of the diet for many people. Tomatoes and cucumber are cooling in the heat of summer and the herbs ensure the dish isn't too dampening and damaging the spleen.

Ingredients

  • 1 ½ cups cracked wheat
  • 3 tomatoes, diced
  • 1 small cucumber, finely chopped
  • Handful chives, finely chopped
  • 2 handfuls Italian parsley, chopped
  • Juice of 1 juicy lemon
  • 1 tablespoon olive oil
  • Freshly ground black pepper

Directions

Step 1.) Soak cracked wheat in cold water for ten minutes. Drain and press to remove excess water.

Step 2.) Mix cracked wheat with all other ingredients and serve immediately.
